BON APETIT-17TH

Dear Friends,

I’ve kind of become late these days in typing out my recipes. never the less, have been posting the reels on Insta gram off and on.

Here’s presenting you with some more interesting, very simple and healthy dishes. Hope u do take time out to try them.

1.Veggie –kala Chana kebabs

2.Fresh Mint chutney with a tangy taste.

3.The khatta meetha tomato chutney .

4. Eggy/Sprouty/Crunchy Salad

5. Yogurt Shakree-la-La

VEGGIE KABABS –  KALA CHANA KABABS

Method:

1.Mix all above with the palm of your hands and make  small balls the size of ladoos.

2.Flatten from top/ below, set aside xx 20 mins

3.You have a choice of Deep frying/ shallow frying on a Non stick Tava

4.Serve hot with Green Chutney/ sauce and other snacks.

 NB:

This makes a very nourishing snack.

Rich in Proteins and iron. It can be taken along with a main course as a side dish or as one of the main items for a High Tea

TOMATO  CHUTNEY SPECIAL

METHOD:

1.Splutter some Panch Phoren in ½ tsp oil, add one dry red chilly torn into bits.

Let it all splutter.

Now add Onions diced, and let them simmer till nice & Pink.

Then fold in the diced Red and Rosy tomatoes, and simmer again X ¾ minutes. After this add the dices ginger and garlic and simmer again till soft. All this will leave some water.

Cover with a lid to allow the whole mixture to cook well.

Next add the diced green chillies/ sugar and the masalas.

When cool pour out in a glass bowl……..cool and refrigerate.

NB

:

Ita a very light and tasty sweet and sour tomato chutney.

It can be used an  accompaniment to parathas/ Dosas/ Besan ka pooras.

I have used it in a special Indo western dish called

The Paneer cake Bake.

SPECIAL MINT CHUTNEY

METHOD:

1.Once the dry masala are ground then grind the Mint/ Coriander and Onions as well into the above

2.Grinds best on a SIL BATTA.

3.Grind all to a smooth paste.

4. Set aside in a jar ( in fridge ) for Use

VEGGIE N SPROUTS N EGGY TOSSED SALAD

Method:

Keep all ingredients ready.

1.Mix all the veggies, fruits,   and sprouts chilled for a couple of hours before plating.

2.Add diced eggs.

3.Toss in the olive oil and give it a good shake.

4.Dribble some lime juice and honey drops for heightened taste.

5.It actually tastes best when it is made and served immediately.

6.It is an excellent side dish as well as very nutritious n healthy.

YOGURT SHAKREELA-LA

                              ( Dahi & shakkar  mishtii)

Method

Take Dahi and churn well, Now add Shakkar and again churn.

Fold the dry fruits (cut small).

Remove into a nice serving bowl.

Decorate with glucose biscuits crushed and powdered.

Super garnish with more dry fruits

Put some Tulsi leaves/ Rose petels to decorate

Chill for a few hours.

Its such a simple dish- just two basic ingredients and the rest is just some garnishing’s.

You all will want more n more of it!!!!

Imp:

Both Dahi and Shakkar are very healthy.

My husband has it every day after lunch. Of course I do not garnish it every day like this!

Imagine, me garnishing like this x 365 days / year!!

Toba- re Tobah!!!

But yes–

Its tasty, nutritious, healthy and intoxicating as well!!!
