Bon Appetite 6

Dear friends,

Much though I started to write the cooking blogs for the benefit of young female starters, I feel, the young boys also, can/will/ should also try to follow and try to make these simple and ultra quick recipes.

Friends, these are recipes that are frequently made in my home. My father loved soups. Every evening my mother would start looking for ingredients to make the soup, every evening she would wonder… Aaj naya kya banaoon? Her soups were more or less clear soups; She would generally boil a little of all veggies, with some black cardamom, whole black pepper and some garlic and ginger.

Boil till tender, cool and pour into a strainer and mash the pulp to extract whatever she could. Then heat, add salt pepper and lemon juice and give to my father.

As I grew along, I soon got tired of her day to day almost same type of soups, and started to devise ways to not throw away the pulp of all veggies. MY MIND SAID—We are throwing away so much of roughage. Slowly I started using the grinder jar and liquidizing the entire soupy material. We decided not to strain, that’s how we came up with thick and tasty soups. Later I was told they are called THICK SOUPS. I started liking them more, since couple of cups of thick soup and an Omelette, would easily fill up the belly.

So now here’s presenting another set of my 4 S’s

SOUP- FRESH MUSHROOM SOUP

SALAD- RANCHI RADDISH SALAAD

SNAX-SOYA MASKA KEBABS

SWEET DISH-BOONDI LADOO KI SHANNDAAR KHEER

 

 

FRESH MUSHROOM SOUP

Method:

1.Keep all ingredients ready as tabulated above.

2.Take Mushroom puree + water in a sauce pan, simmer for 4 to 5 mins.

3. Now add Milk and simmer for 3 to 4 minutes again.

4. Now fold in All plant protein and keep stirring all the time to avoid lump formation.

5.Add salt + Black pepper to taste, and Butter if u fancy.

6.Garnish with diced fresh coriander and or plucked fresh mint leaves. 7. Serve in tall mugs along with a good appetizer eg: Soya kebabs (recipe following…)

THE RANCHY RADDISH SALAD

Method:

1.Keep all ingredients ready. Assemble all together once you are ready to serve the lunch.

2.Mix 1+2+3+4 together.  Add half of the monkey nuts, and fold and roll in the Lemon juice.

3. Add Honey, if you like a slightly sweetened version. Mix well, and roll all ingredient’s giving them all a brisk toss and serve in a nice decorative bowl, super garnished with   coarsely ground monkey nuts that you had served for the purpose!!

SOYA MASKA KABABS

Method:

1.Put all ingredients 1-4 in a cooker/ sauce pan along with half teaspoon of salt.  Cook till done.

2. Cool, now add mashed potato and squeezed bread, and grind till all becomes smooth.

3. Add Pudina + fresh dhaniya + little garam masala, and knead all into a smooth dough.

4.Make as shown in video, 2 inch flat cutlets and either shallow fry or deep fry till golden and done.

5. Plate it. Sprinkle juice of half a lemon if you like the taste of lemon.

6. Serve hot with Mint chutney or Tomato sauce and the Mushroom soup.

BOONDI LADOO KI KHEER

Method:

     

      1. Add the cardamom skins to the milk. Heat milk over low flame stirring constantly, and keep stirring off and on till it reduces to half.

      1. Now gently fold in the crumbled boondi ladoos, and continue stirring gently, for another 5 to 7 minutes.

      1.  Since the ladoos are sweet, no sugar is required.

      1. Kheer is ready when you like the consistency. Some like it thick, while others like it free flowing.

      1. Add 75% of the dry fruits. Stir again. (Leave the rest for garnishing)

      1. Sprinkle the cardamom powder, it is now ready. Some like it HOT. (My husband definitely does like it nice and HOT)

      1. Plate it in a nice serving dish, garnish with the rest of the dry fruits, and sprinkle some cardamom powder on the top.

      1. Many like it nice and chilled, so please ensure to know the likeness of your guest, before you serve him/ her this dessert.

      1. It’s something–unique!!!

      1. Learned it a little over forty years ago from my neighbor in Udhampur; TOPSY GILL. She was a real good neighbor, in more than many an aspect. Turned out as a long lasting friend.

      1. Our kids are very much in contact with each other. Unfortunately, we lost her very early, to the dreaded cancer that she fought with tooth and nail. Whenever I miss her, yearn for her, I land up making a few dishes she taught me.

      1. This is one of them.

      1. Let’s pay her reverence;

      1. Let’s try out her dish.

      1. My family still loves it.!!!

      1. Remember to remove the cardamom skins in case you do not like them in the kheer.
