I promised you last week that I would now start with the non veg verity so lets check it out

SOUP :CHICKEN AND ALMOND SOUP

MAIN DISH :CHICKEN IN A JIFFY

CHICKEN AND ALMOND SOUP

   Method:

1.Take the stock ( liquid that is left over after removing the boiled chicken legs ) from the succeeding Chicken in a jiffy recipe enlisted just below   .

2.Place is a big sauce pan, add soya sauce, Simmer a few more minutes, add vinegar, salt to taste and allow to simmer 7/8 min. Add the corn flour homogenous paste and keep stirring so that the lumps are not formed.

3.Keep simmering  3-4  minutes more , till the soup thickens to the desired consistency.

Now add half the almond slivers into it along with some black pepper.

Add little butter if you fancy( I personally avoid where ever I can.

Now serve asap in nice soup mugs( float  some more almond sliver on top alomg with some fresh pudhina leaflets.

Serve hot. It’s a very delicious soup.

In 1980,we went for dinner to a senior officers home.Had this soup at a their place. ..Mrs  Masih. w/o Col Masih .  She has made a no of dishes. Quite a few were first time for me.  I have loved it since then.

No chicken  ….Just the stock and few Almonds.

You gotta believe me!!!

 I have always made these two recipes, as accompaniments to each other when ever I used to make OnlY Conti dinners for some exclusive guests.

CHICKEN IN A JIFFY

Method:

  1. You would have noticed I have kept garam masala on the table
  2. First lot..dry roasted and ground in a brass pestle and mortar
  3. 2nd lot, dry roasted and pound in another mortar with one tsp of water,

4.Take Ghee in the pan, when heated splutter 5/6 cardamoms , then throw in the coarsely ground masala, , saute  1-2 min, then add the 2nd set of masalas and simmer again. and gradually fold in the  drained chicken pieces one at a time such that soon all are evenly covered with all the masalas.

2.Now sprinkle in the soya sauce to give it a tangy flavour and also heighten the colour.

3.Plate the dish, Spread some tomato sauce on the chicken pieces, garnish with fresh Mint  leaves.

4.Serve as a main dish along with Fish Mayo,, Grilled tomatoes, Boiled and saute peas, And Garlic bread 5. Meal must begin with the soup mentioned above. This is a very attractive dish that is rich in nutritive value( since not too much of cooking is done)  and can be cooked in a jiffy.
