Dear friends,

Today after a no of days I have finally found my Mentor( he was travelling to South),

who has readily agreed to share these recipes on the web site for me. I’m grateful to him.

Sharing One soup, two side dishes,  and  one dessert.

Soup:                   CHEESE AND ONION SOUP

SNAX:                 1.MUSHROOMS IN A CREAMY MEDLEY

                           2. RAGI IDLEE ‘S  IN  MUSHROOM CREAMY SAUCE

SWEET DISH:    CHARISMATIC  QUICK DESSERT

Cheese & Onion Soup  

Method :

  1. Grate Amul cheese and keep ready as suggested above.
  2. Grate onion and keep aside in a small bowl.
  3. Take butter in a heavy bottomed broad  Saute pan.
  4. Add grated  onion into it and slowly stir X 3 to 4 min.
  5. Add water into it and simmer x 2/3 min.
  6. Now add milk and re allow to simmer over low flame.
  7. Next add the grated cheese and allow to simmer x 5/6 minutes.
  8. Next add  Corn starch paste to thicken the same.
  9. Add salt n Black pepper and when ready  fold in some freshly diced dhania/ Pudhina

10.Serve sizzling hot in  tall mugs, nicely super garnished with slivers of Almonds.

This is a novel kind of soup.

It carries a distinctive fresh flavour.  We all love this soup.

A very popular soup especially during the times my father was in service,

And then ,when we were in the service, we used to make it when we had special guests who came in for dinner.

My father loved this soup. When everWhenever I miss him, I order for some cheese cubes via Blinkit.

MUSHROOMS IN CREAMY SAUCE

METHOD:

1.Wash, pat dry the Mushrooms. Separate the umbrella of the mushrooms from the stalks.

          2. Now cut them  horizontally   each into 2 halves- Set aside.

3.Now take the stalks and chop them fine.

4Next chop the garlic also fine. Set aside.

5.Take butter in a flat  bottomed pan, add crushed garlic and  the diced stalks of the mushrooms.   Saute till tender.

6.Add Roundals of Mushrooms and  saute,  toss and turn gently. Cook till mushrooms are soft and well cooked.

7.Add  the  water, let it simmer, then add the milk .

9. Add salt, Simmer , X 3-4 minutes. Add All plant protein mix and Corn starch slurry into the above.

10 .Continue stirring all the time.

11.It will gradually thicken and stick to the mushroom roundals.

12.Add cream if you fancy it slightly rich in creamy flavour.( I normaly avoid it) Or add another blob of Amul Butter

13.Add chopped Dhania  / Pudhina.Sprinkle oregano and red chilli flakes and black black pepper coarsely ground.

14. Serve hot., with freshly cooked Macaroni in Red sauce.

15.The colourful ensemble of Creamy Mushrooms with Red macaroni dish looks bright and colourful. My grandson loves it.

Ragi idlees in Creamy Mushroom sauce

Method:

Keep the Creamy mushroom sauce so prepared as in the above recipe ready.

Place 4 ragi   idli’s in a soup plate or a flat bottomed   scoopy plate.

Pour this creamy sauce so prepared liberally on atop the idles. It should be naive and piping hot.

Garnish with fresh coriander twigs   and  serve asap.                                                                                       

It’s a south Indian dish with a Cnti flavour. Can be had as a side dish , be it along with a Southy spread or even along with a Conti menu.

CHARISMATIC   QUICK   DESSERT

Method:

  1. Mix Curd and Condense milk and give a quick churn in a blender.  Or churn it well through a sieve. No sugar is required.
  2. Put in a flat bottomed steel container / or straight into a Borosil   bowl. Mix the small Cardamom powder and Cinnamon powder gently.
  3. Next , put the bowl in a double boiler, cover the quick dessert with a thin steel lid  / Aluminium foil. Cook x 20/25 minutes till is sets well.
  4. Insert  a knife into it and see if it is set as u would check  cake.
  5. Remove from flame. Cool.  Then try to turn it top side down with the help of a flat plate onto a nice serving flat dish.
  6. Garnish with assorted dry fruits n seeds, sprinkle some more Cinnamon powder on top. Chill in freexer x another couple of hours. Serve chilled.
  7. Its yummy.!!!
  8. Some say its like Mishti Doi.
  9. While others say – its like Tiramisu.
  10. What ever it be. Its quick, very imple, easy to make with a couple of ingredients, and can be made without much ado!!!
