Soup: Beetroot Soup

High protein Egg Dosa
Sweet Dish: Shakkar – kandi special Halwa
Beetroot soup

Method:
Take the onion , potato. Carrot Bone each, wash, and cut into small pieces.
- Add 150 ml of water, salt and allow to cook till tender.
- Add the beet thin cut slices into above and let Take the onion , potato. Carrot one each, wash, and cut into small pieces.
- Add the beet thin cut slices into above and let them all go tender.
- Then add the Tomato dices and cook another 5 minutes.
- When all are cooked, Strain the veggies from the stock so prepared, allow to cool.
- Then liquidize, into smooth paste. Add balance of the veggie stock and re simmer another5/7 minutes.
Pour hot into flat soup bpwls
- Garnish with blobs of Cream and some fresh parsley/ mint that is available
- them all go tender.
- Then add the Tomato dices and cook another 5 minutes.

RAINBOW IDLEES
( Independence day special )

Method:
.Make Palak puree as directed in the first step.
2.Make red puree with beetroot as instructed.
Just to share that I have made ice cubes with Bet paste and Palak paste.So here I have just used one cube of each.
3.And make yellow paste with haldi and some milk.
4. Take the All plant protein batter and fold it gently into the idli mixture. (Friends this is purely optional. I love adding this , thus mentioned.)
5.Now divide the Idli batter into three portions, add and mix palak puree in One, Beet root puree into the second one, and haldi mixture into the third one .
6.Now , add salt /black pepper according to taste and then pour into idli moulds as shown in the picture.
7.Steam till done.
8.Unmould, serve hot with fresh Coconut chutney.
I made this a few years ago on Independence day. My kids love the colourful Independence day idleez and we love serving them to our friends as well.

High protein EGG DOSA


METHOD :
- Pour a big spoonful of dosa batter on to a well heated tava, spread as you would for a dosai.
- Now Break two eggs on to the dosai, like you would for Single fry( but on top of the dosa )
- Now sprinkle the diced veggies all over.
- Pour some cooking oil all around, cover with a lid and let it cook for 2/3 minutes.
- Turn it upside down, cook some more , till the eggs are well settled.
- Once again, turn it with the sunny side now on the top, add a dash of Butter, grated cheese if u fancy,
- Season with salt & pepper acc. to taste.
- Serve asap, hot and tempting to your guests, with Red chilly tomato sauce( preferably the sauce that I taught you a couple of weeks ago.
- I’m sure, this inviting Egg -High protein dosa will be a great HIT!!!

Shakkar – kandi special halwa

Method:
1.Take Desi ghee in a broad , heavy bottomed karahi.
2.Splutter saun when ghee is hot, add all the grated potato and shakkar kandi .
3. Toss and turn slowly over a low flame x 8/10 min.
When u feel that it is cooked, and the waftis spreading around the room, add sugarc acc. to taste.
Simmer againx 4/5 minutes.
Now whn the ghee leaves the sides of the kadai and u feel its nice . cooked, hot and ready, fold in 3/4th of the dioced dryv fruits.
Serve hot , garnished with some more dry fruits.
Remember:
Thisb is a nanai/ dadi ji and special sweet dish.
Most have forgotten these old recipes. But they carry their own Nostalgic charm.We have since turned to trying out these grand mom recipes.
