I’m as excited to share as you would be, if you have tried a few of my recipes.

So-

Now,I present before you the next set of my 4S’s

Soup: Cabbage Soup

Salad:Moong& Masoor dal salad

Snacks:Dhokla

Dessert: Fantasized Custard

 

FRESH CABBAGE SOUP

Method:

  1. Take a sauce pan, add butter n let it melt over low flame.
  2. Add the very finely diced cabbage n sauté till it becomes light pink.
  3. Add 250 ml water. Simmer for 5 minutes.
  4. Add milk. Let everything simmer for 5 to 7 minutes.
  5. Add salt/pepper, and the wheat flour paste and keep stirring so as to ensure that no lumps set in.Add shredded cheese if you like it and get a richer and morecreamier taste.
  6. Serve hot garnishedwith fresh coriander and slivers of almonds if u fancy.
  7. It is an excellent soup, tasty, nourishing and appetizing
  8. It can be made in fifteen mins provided the cabbage is diced beforehand.

My children just love this soup.

My MIL who hated soups towards the end of her living days,wanted me to make it every day!!!

THE MOONG/MASOOR DAL SALAD

Method:

1.Mix all the ingredients together except the salt and pepper

  1. Add the salt / pepper just before serving.

3.It is a highly nutritious salad and can be an accompaniment toNorth/ South Indian cuisine.

4.To give the added south Indian flavour, you may season it with sweetlimepatta (kadi Patta), &mustard seeds seasoning.

HOME MADE INSTANT DHOKLA

(Cold cross dhoklas)

Method:

1.Mix all the contents except the  ENO and make a thick and homogenous dripping dough. Leave it untouched for 15 to 20 minutes.

2.Now pour the ENO on the dough, add a couple of spoons of water on top of the ENO to activate it.

3. Stir the mixture gently .

4.The ENO will make it froth and the mixture will swell in size.

5.Pour into well lubricated idlee moulds and cook in a double boiler for 7-10 minutes.

6.When cooked, set aside to cool.

7.Take a knife and make a cross like you would to a hot cross buns. Set aside.

8.Now take some cooking oil.

9.Splutter Sarson/ Kadi Patta/ green chillies slit longitudinally into the mix. Add 250 ml of water.Add adequate salt/sugar and let it simmer.

10.When done squeeze juice of  2 to 3 lemons.

11.Place the idli dhoklas so prepared with the crossed cuts on the top side and pour all the water with the lime mix onto all of them.

12.Garnish with fresh coriander and grated coconut.

  1. Keep in fridge for 2 hrs.

14.Serve with freshly made coriander and coconut chutney as well as sweetened Imli chutney.

FANTASIZED CUSTARD

Dear friends:

Learnt this simple recipe from my mother’s cousin Meena didi.

She is just about 5 to 6 years older than me, and we all lovingly call her DIDI. She lives in Sonepat, and has taught me a no of cute and quaint dishes that I shall be sharing in the near future.

She once made  this dish in her home in Sonipat, and we slurped it all up and kept clamoring for more!!

So Let’s begin:

Make the custard as you would in any ordinary way.

FANTASIZED CUSTARD

Method:

1.Make the custard as you would in any ordinary way.

2.The trickin this recipe is that you take another pan-

3.Put the second lot of the sugar with 2tbsps of water and put over low heat..

4.Stir all the time as soon as the sugar turns brown it will liquidize by itself.

Add half teaspoon of coffee powder or chocolate powder to heighten both the colour as well as the flavour.

5.Please do not stop stirring at all, once it liquefies it is absolutely ready.

6.Immediately add all the cream and stir vigorously.

  1. Now add all the custard that you have prepared previously,

8.It will thicken immediately. Remove from fire and pour in a serving dish.

  1. Fold some coarsely cut walnuts into it.

10.Decorate with walnuts that have beencaramelized previously.

11.Chill for 3 to 4 hours. (Do not chill in freezer)

12.Serve chilled.

13.Everyone keeps eating it, wondering what is it and yet keep clamouring for more.
