Dear Friends,
I bring before you my first set of recipes
The first four S’sthat is: SOUPS, SNACKS, SALADS &Sweet dishes (Desserts)
This will comprise of one yummilicious soup, one tasty and crunchy snack one heartening nutritious salad & one Savory sweetdish.
I’ve outlined a few popular dishes from my kitchen:
Soup: Palak soup
Snacks: Semolina pears
Salad: Carrot salad- the (Italian Touch)
Sweet dish: Meethi seviyaan
SOUP-PALAK SOUP
Method:
Three main ingredients:-All one mug each
1.Heat the stock / sauté pan.
2.Mix Water and palak Puree together. In a sauce pan. Let them simmer for 4/5 mts.
3.Add same quantity of warm milk. Simmer 4/5 mts.
4.Gently fold in the protein and water emulsion so prepared, stirring all the time to ensure that no lumps are formed.
4.Add required quantity of salt and freshly ground black pepper.
5.Garnish with shredded cheese(if u fancy), add a teaspoon of fresh malai (again if u like).
Serve hot with Semolina pears / Sooji Cutlet along with a pungent dip.(recipe attached)

SEMOLINA PEARS
All three of equal quantity
Method:
1.Take a kadai/saute pan. Add same quantity of milk and water.Put on slow flame.
2.When it starts to simmer, add finely chopped onions, greenchillyand grated ginger. Let them simmer for two to three minutes.
3.Now add finely chopped coriander and slowly fold in the roasted semolina, stirring continuously all the time.
(Care should be taken to see that no lumps are formed)
4.Carry on stirring till it solidifies, and all mixture collects at the bottom. Let it cool.
5.Now make small balls and shape like pears.
6.Then deep fry a golden colour. Take small sprig of mint and garnish like shown and serve hot with a pungent dip.

CRUNCHY CARROT SALAD
Method:
1.Keep everything in readiness, only assembling is required just before serving.
2.Gently squeeze a small quantity of the juice from the grated carrots.
3.Now add everything together. Fold gently with a wooden flat ladle and SERVE ASAP
4.If not served asap it will lose its crunchiness.
IMPORTANT:-
Carrots: They are powerful antioxidantsand provide lots of Vitamins espVit A:: Good forVISION HEALTH &HEART HEALTH.
A Variation:-CABBAGE CRUNCHY SALAD
Same salad can be made in a similar manner with finely diced fresh cabbage in place of grated Carrots.
Infact the same can also be made with grated raddish (mooli) in place of carrot/ cabbage.
Cabbage is rich in Vit C. Fiber & Vit K. Aids in GUT HEALTH AND HEART HEALTH
MOOLIE SALAD:-helps in bone health, it is rich in FIBER so improves digestion and aids in body metabolism.

MEETHI SEVAIYYYAN
(BAMBINO)
Method:-
1.Take roasted Bambino in a pan and add required amount of water and let it simmer it for 2 to 3 minutes.
2.Add small cardamoms asap.Simmer 2 to 3 min. over low flame.
3.Add Sugar and cover with lid for 3 to 4 min.
4.When almost set, add the dry fruits including the thin Coconut slices.(leave some dry fruits for garnishing)
5.Just before serving add the Desi ghee, fold in gently and turn into a serving dish. Garnish with left over dry fruits and serve hot.
6.Itssomething like Eid walisevaiiyaan but the bambino fragments look ROYALE as they spread out onto your plate.
7.SinceDesi ghee is folded in just before serving it does not lose its Omega 3 content and the aroma is also retained.Since there is minimal ghee, they also do not stick to each other!!

When I began my work on my Recipe Book, it was for my youngsters. But, now they are grown up and accomplished
