ENERGY SOUP– CHICKEN AND BONE SOUP

METHOD:
Wash the bones thoroughly, add the onion cut into 4 pieces, all the full tomatoes (no need to cut them), the garlic-ginger paste, and the condiments.
Add salt to taste.
Put the chicken and all the above things in a cooker. Add 5 cups of water and put on the flame. Let 2 whistles come, then reduce the flame. Let it cook on low flame for about 30-35 min. Let the cooker cool down.
Now strain the soup through a strainer.
Keep 1-2 small pieces of chicken aside. Pull out some shreds and keep them aside for garnishing.
Next, debone the rest of the chicken, remove the skin of the tomatoes, and also remove the bay leaves and the outer skin of the large cardamoms.
Pass the whole mixture (including some pieces of mashed chicken as well) into the grinder, and make it into a thickened paste.
Next, reconstitute with the strained stock to the quantity you desire.
Let it simmer X 5/7 minutes.
Add the cornstarch slurry so prepared—but remember to keep stirring continuously.
Add the salt and pepper to taste.
May add butter 1-2 blobs if u like.
I normally avoid it, as chicken itself has a large quantity of fat in it.
Pour into nice tall mugs. Garnish with a little shredded chicken if you like, and serve hot.
