CHICKEN PICKLE

Method
- Take a cooker and once red hot add all the chicken pieces into it.t
- Stir the chicken over medium to high flame , keep stirring all the time 5/7 minutes. Remove all the chicken pieces when all the water will dries up.
- Now take 75 ml mustard oil, heat till it smokes. Now add all the chicken pieces back into the cooker, and lowering the flame stir and simmer 5/7 minutes
- Now add the coarsely ground G.G & green chilly paste. Stir and frequently toss the chicken X 5/7 minutes
- Now add the finely minced Garlic & Ginger paste and stir some more
- Ti,e now to add Salt/ Red paprika and garam masala
- Cover the lid and let it cook over slow heat 8/10 minutes.
- Chicken by now is mostly cooked. Time now to add the Vinegar.
- Simmer some more, and then remove from fire and allow to cool. When absolutely cool, bottle in a container Cover with a tight lid and transport where ever it is most wanted.
- Many years ago my Devar – Ashok ( who then worked in Kanpur ) would send me a letter to say he was coming and I needed to keep the chicken pickle ready. I always had it done before he came. He loved carrying it back.
- Now my grand son Rannveer wants it, and I do the same for him!!!!
