Fresh matar soup

Beet cutlets

Indaianized Danish toasties

Home made chilly sauce

Golden pumpkin halwa

Method:

1.Boil fresh matar, till tender, cool and liquidise as shown in pictorial, to make Pea Puree ( almost one mugful)

2.Now take one mug water and one mug Matar ki puree in a sauce pan, Simmer over low flame xx 3 to 4 minutes.

3. Then add one mugful of milk and allow to simmer again x 3 to  4 minutes.

4.Next, add salt n pepper to taste , two blobs      of butter and wait for one last boil.

Decant into smart tall mugs, decorate with a circling of fresh malai, and serve hot.

Indianized Open Danish Buns     

Method

1.Take the buns , slit them horizontally as shown in step 1.

2.Now put the grated paneer in a thali, add all rest of the ingredients except cornflour.

3.Add the spices as mentioned.  Mix well and make a smooth dough.

4.Now take a big spoonful  of this mixture and spread it liberally on the buns.

5. Next, turning them top side down dip into the cornflour paste bowl and see to it that it covers the whole spread.

6. Heat a Non stick pan, lubricate with minimal cooking oil, and one by one put them on the tava , with the stuffed side down.

7. Roast them on both sides, till nice and golden brown.

8.Serve asap with fresh mint chutney and home made red chilly sauce

along with one of the very many soups that I have illustrated to you earlier!!!!)

HOME MADE RED CHILLY SAUCE

 Method:

1.Take an empty jar, with a tight fitting lid.

Put all 1+2+3+4 into it. Cover in tighten the lid

Now keep in the veranda where there is ample sunlight.  x …10 days

2.Remove contents and liquidize. Rebottle and keep in the fridge.

The colour is an astonishing orange , the taste is deadly.

3.Be  careful and taste .

It is orange and HOT!!!

You will love this!!!

Alternative recipe:

Use fresh green chillies in place of the Dry chillies. Rest of the ingredients and the procedure remains the same.

Beet Cutlets

Method

  1. Very simple recipe
  2. Just  add 1/2/3/4/5
  3. Mix and make a smooth dough
  4. Make medium size balls, flatten from top n bottom.
  5. Shallow fry in minimal oil as shown in my reel on Nutritious snax along with  Indianized Danish Open Toasties.
  6. I’m sure you will enjoy these bright red/ maroon  cutlets with home made chillie sauce n fresh mint chutney.

Golden Pumpkin HALWA

Method:

  1. ake a  heavy bottomed pan,
  2.  Splutter saunf into hot desi ghee, and then pour all the grated pumpkin into it
  3. Cook n, frequently turning it upside down and let t cook for 15/20 minutes.
  4. When u feel it is almost done add sugar according to taste and stir and let it simmer such that all the sugar gets completely absorbed into it.
  5. Now add the dry fruits and the diced coconut pieces and simmer some more till the ghee starts to shine and show that the halwa is almost done.
  6. Sprinkle some cardamom powder on to it and serve hit.

IMP:

 It’s a highly nutritious dessert.

It is made very quickly.

It is rich in Vit A/ Vit C. It’s a swell dish that can be made in a jiffy and it may appear old fashioned but wait till you taste it!!!

Some like it chilled, but this is best eaten nice & piping HOT!!!!
