BON APET’IT -7

I am So Sorry,

I have over delayed my self from publishing the next blog!!

I’ve been travelling, and thus  took an   involuntary sabbatical from blogging.

I hope you all have been waiting for my next blog on my 4 S’s

Hope , if u have tried some of my recipes, you would have found them very tasty

Hope aap ko thoda  mazza aa raha  hoga,

Lets now see what this chapter holds for all of us-

Again another Soup/ salad/ Snax/ and sweetdish???

You must have noticed –So far all my recipes were/ are vegetarian  dishes.

No.. absolutely a Big Big NO!!!!

I’m not a vegetarian, but I like experimenting with Vegetarian ones…….

Incidentally,  my Mother and Mother in law were  both vegetarians (my ma was an eggetarian as well!!)

So, if I cooked Non veg dishes I also had to prepare a veg variety. Hence for convenience of self and   mental comfort of all I started to prepare a lot of Veggie dishes.

But, be rest assured many a non veg dish will come along!!!

So here’s presenting before the next lot of my 4 S’s

Soup:Drumstick soup

Salad:Macaroni n Veg ensemble

Snax:  Mix veg cutlets

Dessert:  Makhmali   Macaroni   Custard

Wash, scrape, cut x ¾ inch pieces

Mix  with diced potato and onion and boil in water with little salt

method:

1.Cook 1+2 till tender in 200 ml of water.

  1. When it is cool,   grind in a mixer jar and strain to remove the rough outer skin of the drumsticks

3.Should be approx. one mug full.

  1. Put Drumstick puree + water (one mugful each) in a sauce pan , simmer x 4/5 min.
  2. Add one mug of milk , simmer again x 3 to 4  minutes.

6.Fold in No.5 (Protein paste) gently, stirring all the time.

7 Add seasoning, and butter if you like.

  1. Bring to one last boil, pour into nice big Mugs , garnish with fresh plucked pudhina, serve hot along with soup sticks.

Also contains…minerals like Calcium/ Iron/Mag / Potassium.

It is a very rich source of fibre and protein.

Good to reduce symptoms of Asthma, cough, wheezingand other URI problems..Quick relief from common cold.

Drumstick soup boosts the immunity and keeps diseases at bay.

Drumstick protects the skin / hair.

Treats oedema/ stomach complaints/ fights bacterial infections/protects the liver, makes bones healthier thus helping in increasing bone density and preventing Osteoporosis.

METHOD :

1.Dice carrots/  capsicum/cabbage into small one inch pieces.Chill 2/3 hours.

2.Keep a big bowl ready:

3.Put all veggies so cut into bowl, add diced and washed onions.

  1. Fold in the boiled,cooled , strained & drained macaroni.
  2. Pour lemon juice/ soya sauce &olive oil in a small petri dish,
  3. Now mix together and add salt/ black pepper along with some oregano & basil herbs. And fold it into the contents of the petri dish.

Let this magic potion REST xx15 minutes.

Just before serving pour this dressing so prepared onto the macaroni and vegies ensemble and give it a thorough toss.

Serve asap.

IMPORTANT:

1.It is a very crunchy salad along with it being highly nutritious.

2.Please only assemble it just before serving else its crunchiness will go.

Goes very well with an English menu

SNACK:

                                                                                           MIX VEGGIE CUTLETS

1.

Potatoes

350 gms

Boil,  drain & set aside when done.

Mash, Grate and smoothen out into a thick homogenous mass

 

2.

Beans/carrot/ cauliflower/ peas/ capsicum.

150 grams ( what ever is available)

Cut very fine, boil, strain, drain.

Fold with fingers and crush a little

Bread slices

Soak in water, drain immediately

Crumble and set aside

4.

Salt/ pepper/ garam masala.

Acc. to taste

Add to all the stuff above and mix well.

5.

Ginger/ green chilly

Acc. to taste

Add to above mix and mix well

 

6.

Lime juicee

1tbsp

Add to mashed potatoes and crushed veggies

 Mix all well and make balls/ rolls as desired. set aside x 10 minutes

7.

Cooking oil

Required amount as deemed fit

Heat till smoking hot

 Deep/ shallow fry as mood/ health demands

Method:

Mix 1+2+3+4+5+6, slowly and deliberately to make a smooth and soft dough.

Now make balls of your choice and shape, set aside.

Rest   them x 10 minutes to give the desired time to set into the shape you have given.

Deep fry in smoked oil over a low flame. Remove when golden in colour.

Put on a brown paper so that the extra oil gets absorbed onto the paper.

Serve hot with fresh Mint Chutney and Tomato sauce.

Ideal snack for a High evening   tea/or as an accompaniment to a continental spread.

ALTERNATIVE STUFFED VEGGIE CUTLETS:

  1. Boiled potatoes + Wet bread crumbs and fresh cut coriander and salt….Knead into a smooth dough….Set aside
  2. Take 1 teaspoon oil,    saute the boiled veggies in it with little diced ginger for 3 to 4 minutes.
  3. Crush coarsely when cool and make small walnut sized balls – Set aside.
  4. Now take a big portion of the potato dough, flatten it on they  our well oiled palms, stuff the veggie ball into it and cover and  nice big stuffed potato balls.
  5. Now flatten them and cover with some corn flour.
  6. Set aside to rest xx 15 min.
  7. Deep/ Shallow fry as you deem fit.

IMP to NOTE

In stead of Deep Frying ::

These days I choose to cook with minimalistic oil on a Dosa TAVA,

You may also like to AIR  FRY,, but then do remember to apply some butter with a brush.

SWEET & SOUR TOMATO/ ONION CHUTNEY

Mix dry fruits (along with Saugi)

Wash, dice into small pieces

Method:

Heat oil, smoke it well, add Panchphoren , then add the red whole chillies broken into small pieces and some kadi patta

Add onions, and green chillies diced, saute  3 to 4 minutes.

Add chopped tomatoes and cook till 4  to 5 minutes till soft and meshy with the rest of the stuff.

Now add sugar and simmer with lid covered, so that the sugar melts into the whole stuff.

Let it be cooled completely.

Cook till 4   to 5 min. till soft and meshy with the rest of the stuff.

It can be served hot also

 Add fresh coriander,    it will heighten flavour.

 It can be stored in an air tight container and kept in the fridge.

IMP: Tastes best with Veggie cutlets / Bread rolls/ and can also be used   as a layer in a variety of club sandwiches.

SWEET DISH :

                                          MAKHMALI  MACARONI    CUSTARDY    DELIGHT

Stir continuously, till nice and thick.

 

Set aside

Wash, soak x 20 min

Cut into small pieces

Grind in a pestle & mortar

 

Method:

1.Make custard as instructed above and add sugar according to taste and choice.

2.Now , gently fold in the boiled and cooked macaroni, and fold in well.

3.Add two third of the dry fruits and fold them all again smoothly.

4.Pour into a nice decorative serving bowl. Allow to cool.Garnish with left over 1/3rd dry fruits and set to chill in your fridge.

Serve after dinner and see the look on the faces of your guests as the savour this simple but very tasty dish.My mother used to make it with Pink Custard Powder.

Haven’t seen this colour Custard powder for several years.!!!
